I’ve been eating leftovers for the last two days–some ginger chicken (takeout) for dinner and this quiche for lunch. The quiche has fresh vegetables like spinach, garlic, onions, and tomatoes in it (though the first three ingredients were cooked in a small vat of butter). And it also maybe has like a pound of cheese (gouda, parmesan, and feta)… so maybe not like the healthiest thing I’ve shared on this blog. But since this actually looks good (and tastes good), I made sure to eat it out of the tupperware container I lugged it to work in.
Okay, you got me, this is how I usually eat all of my leftovers (at work and at home). It’s fine. I’m okay. Everything is fine.
